Meghan Markle just seems to have it all. She’s a successful actress, head over heels in love and about to marry an actual prince. But not only is she all of these things, she’s a healthy eater as well. In fact, she goes out of her way to make sure she looks after her body by following a healthy diet.

The 36-year-old, who is set to marry Britain’s Prince Harry, says that she always keeps almond milk, hummus, carrots and green juice in her refrigerator, as they are healthy, cleansing foods.

Surprisingly, she also stated that she has a weakness for chia seed pudding and makes it almost weekly. In fact, Markle listed it as her fifth refrigerator must-have during an interview.

Why are chia seeds so good for you?

  1. Chia seed pudding is low in calories and creates a sense of fullness in the eater, so it’s sure to be a hit with health-conscious Meghan. 
  2. Chia seeds are rich in omega-3 fatty acids, which are polyunsaturated fats (the good fats). 
  3. They also contain fiber, which is important for regulating bowel function and combating cholesterol buildup in the arteries and veins around the heart.
  4. Chia seeds are also rich in antioxidants. Antioxidants kill off free radicals, which are cells in the body associated with cancer. 
  5. In terms of the minerals they contain, chia seeds are a rich source of calcium, phosphorus, magnesium and manganese, all of which are important for DNA production and your metabolism. 
  6. Chia seeds can be used as an egg substitute for those who have egg allergies. 
  7. They are also gluten-free, which makes them a welcome addition to an otherwise limited diet. 
  8. Chia seeds are also known to play a role in how the body regulates its insulin levels. In fact, they can reduce above-normal levels of insulin in the blood.

What is chia seed pudding?

Many different chia seed pudding recipes can be found on the internet.  Here is one:

Ingredients

2 cups coconut oil

½ cup of chia seeds

½ teaspoon vanilla essence

¼ cup maple syrup

¼ teaspoon cinnamon (optional)

Method

Blend all the ingredients except the chia seeds together until they reach a smooth consistency.

Whisk the chia seeds into the mixture.

Pour the mixture into a glass container and put it in the refrigerator for four hours (or preferably overnight) to let it set.

This recipe makes four servings, so you could consider putting the mixture in four separate glass bowls before refrigerating.

If you prefer the pudding to be smooth, then include the chia seeds with the rest of the ingredients when blending.
